Old School meets New School

Today we looked into the future… one year into the future, to be exact.

We saw ourselves one year older, one year wiser, one year stronger– and one year crazier. Today we witnessed and assisted (read: we were the kitchen bitches) in the ICEX competition between last year’s scholarship winners–the 20ish cooks from around the world whom have been working in Spain for the past year.  

Last year’s crew exhibited skills and discipline that led them ALL to be labeled as “ganadors,” meaning “winners.” Through each cook’s style and choice of preparations, we could see their training distilled into 3 hours of focused cooking; we could hear their mentors’ philosophies voiced through an artistic representation of 10 classic Spanish ingredients.

We heard Ferran Adria through the USA’s Kimmie “don’t call my food  ‘balls’ ” Floresca:

We heard Martin Berasatagui through Switzerland’s Simon Moser, who won the competition with this dish of ham consomme and a Spanish cheese curd-ball-thingie reminiscent of the classic combination of ham and cheese:

We saw Dani Garcia’s lessons through the eyes of Japan’s Naoki Inoue–I hope I learn half as much as he did from this great chef:

And of course, what do cooks do best after a long and stressful service but unwind at the local watering hole… all night… into the wee hours of the morning.

But this night was special: This night marks the passing of the torch–the end of one generation’s journey and the beginning of another’s. We are so fortunate to walk this path together… to learn, to grow, and to make personal and professional friendships that will last a lifetime.

    Can’t wait to see ICEX 2010 when the noobs hear Adolfo and Dani in YOUR creations (but how will THEIR cock-a-doodle-doo sound?)
